Egg Using Recipes- 12-yolk Pound Cake
12-yolk
pound cake is great way to move an entire dozen of eggs out of your fridge. It
is a delicious pound cake that tastes good plain or with whipped cream and
caramel as a topping.
12-Yolk Pound Cake
12 Large Egg Yolks
3 c. All-purpose Flour
2½ tsp. Baking Powder
½ tsp. Salt
2 c. Granulated Sugar
1 tsp. Vanilla
1 tsp. Lemon Extract
1 c. Cold Water
Instructions:
Spray two nine-inch loaf pans with cooking spray.
Preheat oven to 350 degrees F.
In a mixing bowl, beat egg yolks until very fluffy and thick.
Gradually beat in sugar and beat 2 minutes on high speed.
Reduce speed to low and add vanilla, lemon, and cold water.
Add flour, baking powder, and salt while beating on low.
Beat only long enough to blend, about 2 minutes.
Pour batter into prepared pans.
Bake 25 minutes or until golden brown.
Bonus points for making this on the same day as a 12 Egg White Angel Food Cake!

Egg Using Recipes- Popovers
Popovers are a light and puffy versatile muffin.
Popovers – 1 dozen
Preheat oven to 425 degrees.
Place muffin liners in muffin tin.
Place 3 eggs
in a blender and puree til foamy.
Add:
1 c. Milk
½ c. Water
1 ½ c. Flour (can
sub in ½ c wheat flour, if desired)
½ t. Salt
Puree til
thoroughly mixed. Pour into muffin tins.
Bake for 20-23 mins. Serve hot.
Popovers – 3-4 Dozen
Preheat oven to 425 degrees.
Place muffin liners in muffin tin.
Place 6 eggs
in a blender and puree til foamy.
Add:
2 c. Milk
1 c. Water
3 c. Flour (can
sub in 1 c. wheat flour, if desired)
1 t. Salt
Puree til
thoroughly mixed. Pour into muffin tins.
Bake for 20-23 mins. Serve hot.
If doing 4 dozen,
fill 2/3 full and bake for 20 mins. If
doing 3 dozen, fill very full and bake for 24 mins.

Egg Using Recipes- Crepes
Crepes are a light and thin pancake wrap that can be topped with a variety of sweet or savory toppings.
Preheat griddle to 375 degrees.
Add:
6 Eggs
2 ½ c. Milk
4 ½ tbsp. Oil
2 c. Flour
¾ tsp. Salt
1 ½ tsp. Vanilla
Extract
Fillings for
Crepes- Butter, Jam, Maple Syrup, Nutella, Ham, Bacon, Cheese, etc.
Puree all ingredients
in a blender. Brush griddle with oil. Pour batter onto griddle in pancake-sized
circles. Once the crepes are beginning to set and starting to brown lightly around
the edges, flip it over to brown the other side. Top and serve immediately.
Yields
approximately 21 crepes.
